Smaller Batch Oatmeal Craisin Cookies

You can’t get good snacks anymore that don’t have GMO ingredients or chemical preservatives, so make your own which are a lot more healthy and delicious. The tartness of the Craisins are a nice change up to the typical raisins. And for a much more decadent version switch out the Craisins for Guittard Butterscotch chips.

Ingredients

  • 1/4 cup + 2 tablespoons butter, softened
  • 1/4 cup + 2 tablespoons raw sugar
  • 1/4 cup + 2 tablespoons packed brown sugar
  • 1 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup + 2 tablespoons Red Mill all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats
  • 1/2 + 1/3 cup Craisins

Directions

  1. Preheat the oven to 350 degrees F (177 degrees C).
  2. Mix butter, raw sugar, and brown sugar together in a large bowl until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in vanilla.
  3. Add in flour, baking soda, cinnamon, salt, oats and Craisins and mix until combined.
  4. Drop dough by teaspoonfuls onto an ungreased cookie sheet.
  5. Bake in the preheated oven until the edges begin to brown, 8 to 10 minutes.
